PRODUCTION PROCESS

We are so passionate about our products that we carry out and supervise the entire process, right from the very moment when the olives are picked from the tree. This is the only way to get the best product by being involved in every stage of the production process. Under the watchful eye of our Quality Control Department, the olives are cleaned and milled. Then the oils are classified according to their quality:
  • A. Extra Virgin Olive Oil

  • B. Virgin Olive Oil

  • C. Lampante Virgin Olive Oil. This has to go through a process of neutralisation, winterisation, bleaching, deodorisation and filtration to become refined olive oil. It is mixed with virgin olive oil to make olive oil.

  • D. Olive pomace. After milling, the ground olives still retain between 10 and 12% of their oil. Chemical extraction processes are thus used to make crude olive pomace oil. This oil then has to go through a process of neutralisation, winterisation, bleaching, deodorising and filtering to become refined olive pomace oil, which is mixed with a range of virgin olive oils to make what is known as olive pomace oil.
